4 salad tomatoes, deseeded and finely diced
½ red onion, finely diced
2 tbsp (15g) jalapeño peppers from a jar, drained and finely chopped
2 garlic cloves, crushed or finely minced
15g bunch of parsley or coriander (leaves only), roughly chopped
Juice of 1 lime
Salt and pepper to taste
In a medium-sized bowl, combine the diced tomatoes, red onion, jalapeño peppers, and minced garlic.
Add the chopped parsley or coriander leaves to the bowl.
Squeeze the juice of one lime over the mixture.
Season with salt and pepper to taste.
Gently toss all the ingredients together until well combined.
Allow the Pico de Gallo to sit for about 10-15 minutes to allow the flavors to meld together.
