Quick and Easy Keto Quesadilla

With just one ingredient, this is barely even a recipe! This crunchy cheese shell is the perfect vessel for turning leftovers into an easy low carb meal or snack. Great served with my avocado crema and pico de gallo.


  • 100g grated cheddar cheese (or any hard cheese)


  1. Lightly grease a large frying pan with nonstick cooking spray.

  2. Sprinkle the cheese evenly over the frying pan.

  3. Place the frying pan on the hob over medium-high heat and cook for 3-5 minutes, until the cheese has melted and is starting to bubble.

  4. Spoon your chosen filling onto half of the cheese.

  5. Using a rubber spatula, carefully fold the other half of the cheese over your filling.

  6. Transfer to a plate and leave to cool slightly and crisp up before digging in.
