With just one ingredient, this is barely even a recipe! This crunchy cheese shell is the perfect vessel for turning leftovers into an easy low carb meal or snack. Great served with my avocado crema and pico de gallo.
100g grated cheddar cheese (or any hard cheese)
Lightly grease a large frying pan with nonstick cooking spray.
Sprinkle the cheese evenly over the frying pan.
Place the frying pan on the hob over medium-high heat and cook for 3-5 minutes, until the cheese has melted and is starting to bubble.
Spoon your chosen filling onto half of the cheese.
Using a rubber spatula, carefully fold the other half of the cheese over your filling.
Transfer to a plate and leave to cool slightly and crisp up before digging in.
