These delicious beef tacos are a perfect low-carb option for a quick and easy solo dinner. With crunchy zero-carb taco shells and seasoned ground beef, you can enjoy the classic taco experience without the carbs. Serve alongside all of your favourite Mexican fixings like pico de gallo and avocado crema or guacamole.
Ingredients:
125g beef mince
1 green pepper, deseeded and finely diced
1 tsp smoked paprika
½ tsp cumin
½ tsp garlic powder
½ tsp onion powder
¼ tsp cayenne pepper (optional)
½ tsp Worcester sauce
Salt and pepper, to taste
50ml passata
Squeeze of lime juice, to taste
70g grated cheddar cheese
Instructions:
Heat 1 tsp oil in a small sauce pan over very high heat.
Add the beef mince to the pan, spreading it evenly over the base, and leave it to cook for 1-2 minutes until the bottom is very brown (but not burnt!).
Add in the green pepper and reduce the heat to medium-high. Cook, stirring often, for 5 minutes.
Add in the smoked paprika, cumin, garlic powder, cayenne pepper (if using), and onion powder. Cook, stirring continuously, for 1 minute.
Reduce the heat to low. Stir in the passata and Worcestershire sauce, and heat until hot.
Season with salt, pepper, and a squeeze of lime juice to taste. Cover and keep warm while you make the taco shells.
Lightly grease a small frying pan. Sprinkle half of the cheese evenly over the bottom of the frying pan and place on the hob over medium-high heat.
Once the cheese has melted and started to bubble and brown on the bottom, spoon half of the beef mixture over half of the melted cheese.
Use a rubber spatula to gently fold the other half of the melted cheese over the beef mixture in the frying pan. Transfer to a plate.
Repeat steps 7-9 using the other half of the grated cheddar cheese.
