It's incredibly easy to make and can be used as a dipping sauce or served with your choice of protein and a low carb rice alternative like cauliflower rice. Ingredients

  • 2 shallots, finely diced

  • ½ red pepper, finely diced

  • 2 cloves garlic, minced

  • 100ml pineapple-flavored rum (make sure it's sugar-free)

  • 100ml passata (sugar-free tomato sauce)

  • 2 tablespoons liquid aminos (or soy sauce for non-keto version)

  • Juice of 2 limes

  • 3-4 tablespoons brown sugar alternative, to taste

Instructions

  1. Heat olive oil in a small saucepan or frying pan over medium-high heat. Add the shallots and red pepper, and cook, stirring often, until they have softened.

  2. Add the minced garlic and cook, stirring continuously, for another minute.

  3. Turn the heat to high and pour in the pineapple-flavored rum. Allow it to cook for a few minutes until the rum has completely evaporated.

  4. Reduce the heat to medium and stir in the passata, liquid aminos, lime juice, and 3 tablespoons of the brown sugar alternative.

  5. Taste the sauce and adjust the sweetness with additional brown sugar alternative, if desired. You can add another tablespoon or more, depending on your preference.

  6. Season with salt and pepper to taste.

  7. If using cooked protein, such as chicken or seafood, stir it into the sauce and heat until warmed through.

  8. Serve the sweet and sour sauce over cauliflower rice or alongside your choice of protein. Enjoy!
