Ingredients
30g (4 tablespoons) ground almonds
2 teaspoons xanthan gum
½ teaspoon baking powder
Big pinch of salt
45ml (3 tablespoons) water
Instructions
In a small bowl, mix together the ground almonds, xanthan gum, baking powder and salt until combined.
Gradually stir in the water until a sticky dough forms. Cover the bowl and let the dough rest for at least 10 minutes. This resting period allows the almond flour and xanthan gum to hydrate, making the dough easier to work with.
Preheat the oven to 220°C (450°F), or set the air fryer to high heat.
Place the dough between two pieces of nonstick baking paper and roll it into a rectangle about 2mm thick.
Remove the top piece of baking paper. Using a pizza cutter or a sharp knife, cut the dough into 1cm wide fries for even cooking.
If using an oven, transfer the fries (with baking paper) onto a baking sheet. For an air fryer, remove the baking paper and place fries in the fryer basket.
Air fry for 6 minutes, or bake for 10-12 minutes, until lightly golden and crispy. If baking, consider flipping the fries halfway through for even crispness.
