These low carb savoury waffles are crispy on the outside, soft and fluffy on the inside, and taste surprisingly similar to the potato waffles I loved as a kid. And they're ridiculously quick and easy to make! Great keto-friendly alternative to bread or hashbrowns. I recommend doubling, tripling, or quadrupling the recipe then storing the leftover waffles in the fridge or freezer to reheat (5-10 minutes in the oven or toaster) when hunger strikes.
15g butter, melted
20g ground almonds
¼ tsp baking powder
Pinch of salt
1 large egg
Preheat the waffle iron.
Whisk together all of the ingredients until smooth.
Spray the waffle iron with nonstick cooking spray.
Pour the mixture into to the waffle iron and cook for 5-10 minutes until golden and crispy.
